Daily preparing sweets  during ramadan becomes very hectic and I feel short of ideas. During these times this chocolaty banana cake come to my rescue. 

You guys must be wondering why I am preparing sweets daily. Now as it is ramadan and a month of giving and blessing, we give away iftar to few people daily. So the menu is quite large. Though I prep myself before ramadan, but sweets I cannot freeze. Now as ramadan is nearly ending, more of my time is spent on ibadat, so keep the menu of these quick cakes and other sweet for the last ten days.



And whatever is leftover, many desserts can be assembled from it. I hate wasting food. Motto is prepare only that much amount of  food that can be consumed.Lets move to the recipe. The Chocolate banana cake recipe is real simple, and the outcome is yummilicious of chocky goodness.


Ingredients (Makes around 8 inch square cake)
Recipe from joyofbaking

I
Dry Mix
200 gm sugar
120 gm flour
40 gm coco powder
3/4 tsp Baking powder
3/4 tsp Baking soda
1/4 tsp salt

Wet mix
1/2 cup banana mashed (1 big size banana riped or unripe)
60 ml milk
60 ml oil
120 ml warm water
1 egg
3/4 tsp vanilla essence


For the chocolate ganache
 125 ml cream
1 cup chocolate chips
1tbsp butter


Method
  1.  In a separate bowl mix all dry ingredients (I)
  2. In a separate bowl mix all wet ingredients (II)
  3. Mix both wet & dry together.
  4. Pour over the lightly greased tray
  5. And bake for 40 minutes @ 160°C
  6. When done cool completely
  7. Spread the chocolate ganache (Recipe below)  on the cooled cake. 
  8. Refrigerate for 25 minutes and slice & serve with any fruit or icecream.


For the chocolate ganache
  1. Heat cream at a very low temperature
  2. Add in butter followed by chocolate chips.
  3. Stir for a few seconds & removed from flame
  4. Stir till the chips are melted.

# You can make cupcake also using the same recipe.
# Can be covered & stored up to 15 days in refrigerator
